Ingredients
  

For the Egg White Mixture
  • 3 tbsp Green onion, sliced
  • 1/2 cup Spinach, fresh Can substitute with kale
  • 16 oz Egg whites
  • 1/4 tsp Black pepper, ground
  • 1/3 cup Red pepper, raw or roasted, diced
  • 1/4 tsp Sea salt
  • 3/4 cup Cottage cheese
  • 3/4 cup Monterey jack cheese Can substitute with any preferred cheese blend

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the egg whites, cottage cheese, and Monterey jack cheese until well combined.
  3. Fold in the chopped green onion, spinach, diced red pepper, ground black pepper, and sea salt. Mix everything together thoroughly.
  4. Grease a muffin tin with a light coat of cooking spray or oil.
  5. Pour the mixture into each muffin cup, filling them about three-quarters full.
  6. Bake in the preheated oven for 20-25 minutes, or until the tops are lightly golden and the bites are set.
  7. Let cool for a few minutes, then carefully remove the bites from the muffin tin. Enjoy your homemade egg white bites!

Notes

These bites are great served alone or paired with whole-grain toast and fresh fruit. They can also be enjoyed with salsa or avocado. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to a month.
