Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the egg whites, cottage cheese, and Monterey jack cheese until well combined.
- Fold in the chopped green onion, spinach, diced red pepper, ground black pepper, and sea salt. Mix everything together thoroughly.
- Grease a muffin tin with a light coat of cooking spray or oil.
- Pour the mixture into each muffin cup, filling them about three-quarters full.
- Bake in the preheated oven for 20-25 minutes, or until the tops are lightly golden and the bites are set.
- Let cool for a few minutes, then carefully remove the bites from the muffin tin. Enjoy your homemade egg white bites!
Notes
These bites are great served alone or paired with whole-grain toast and fresh fruit. They can also be enjoyed with salsa or avocado. Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to a month.
