  • 6 pieces hard boiled eggs, peeled
  • 2.5 tbsp mayonnaise (Duke's preferred)
  • 1/4 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp sweet relish plus a bit of juice
  • 1 tsp yellow mustard

Method
 

Preparation
  1. Hard boil your eggs.
  2. Dice the hard boiled eggs or use an egg slicer. If using the slicer, slice in one direction, turn the egg 90 degrees, and slice again for nice, even pieces.
  3. In a bowl, combine all the ingredients: mayonnaise, onion powder, salt, pepper, relish, and mustard. Gently fold in the diced eggs until well mixed.
Serving
  1. Serve your delicious egg salad with fresh lettuce on a croissant or your favorite bread.
