Ingredients
  

Main Ingredients
  • 2 cups cooked rice Best to use day-old rice for better texture.
  • 2 whole eggs Scrambled in the pan.
  • 1 cup mixed vegetables (peas, carrots, corn) Substitute with any vegetables you have.
  • 3 tablespoons soy sauce Adjust to taste.
  • 2 tablespoons cooking oil For frying.
  • 2 whole green onions, chopped For garnish.

Method
 

Cooking Process
  1. Heat the cooking oil in a large pan over medium heat.
  2. Crack the eggs into the pan and scramble them, then set aside.
  3. In the same pan, add the cooked rice and stir-fry for about two minutes.
  4. Toss in the mixed vegetables and continue stir-frying until they’re heated through.
  5. Pour in the soy sauce and mix well to combine all the flavors.
  6. Add the scrambled eggs and green onions, stirring everything together.
  7. Cook for an additional minute, then serve hot.

Notes

Leftover fried rice can be stored in an airtight container in the refrigerator for up to five days. To reheat, microwave or toss back in a skillet with a splash of water. For freezing, portion and freeze for up to three months, allowing it to cool first.
