  • 2 large large chicken breasts cut in half lengthwise
  • 8 ounces cream cheese softened
  • 1/2 teaspoon garlic powder
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1/2 medium onion chopped
  • 3 cloves garlic minced
  • 3/4 cup chicken broth
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes optional for added heat
  • 1 tablespoon fresh chopped parsley optional for garnish

Preparation
  1. Microwave the cream cheese until very soft. Cut it into smaller pieces and set aside.
  2. Slice the chicken breasts in half lengthwise and season with garlic powder, salt, and pepper.
Cooking
  1. In a skillet over medium-high heat, melt the butter and olive oil together.
  2. Add the seasoned chicken and cook for about 5-6 minutes on each side until golden brown and cooked through.
  3. Transfer the chicken to a plate.
  4. Lower the heat to medium and add the chopped onions to the skillet, sauté for 5-7 minutes until softened.
  5. Stir in the minced garlic and cook for an additional 30 seconds.
  6. Pour in the chicken broth, then add the softened cream cheese along with Italian seasoning and crushed red pepper flakes. Stir until smooth.
  7. Return the chicken to the skillet, ensuring it is warmed through. Adjust the sauce's consistency with more chicken broth if necessary.
  8. Season with salt and pepper to taste and sprinkle with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, allow to cool completely before transferring to a freezer-safe container.
