Preparation
- Microwave the cream cheese until very soft. Cut it into smaller pieces and set aside.
- Slice the chicken breasts in half lengthwise and season with garlic powder, salt, and pepper.
Cooking
- In a skillet over medium-high heat, melt the butter and olive oil together.
- Add the seasoned chicken and cook for about 5-6 minutes on each side until golden brown and cooked through.
- Transfer the chicken to a plate.
- Lower the heat to medium and add the chopped onions to the skillet, sauté for 5-7 minutes until softened.
- Stir in the minced garlic and cook for an additional 30 seconds.
- Pour in the chicken broth, then add the softened cream cheese along with Italian seasoning and crushed red pepper flakes. Stir until smooth.
- Return the chicken to the skillet, ensuring it is warmed through. Adjust the sauce's consistency with more chicken broth if necessary.
- Season with salt and pepper to taste and sprinkle with fresh parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, allow to cool completely before transferring to a freezer-safe container.
