  • 1 cup buttermilk You can substitute with regular milk with vinegar.
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Preparation
  1. In a bowl, mix the flour, sugar, baking powder, and salt until well combined.
  2. In another bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.
  3. Combine the wet and dry ingredients, stirring until just mixed. It's okay if there are a few lumps!
Cooking
  1. Heat a skillet over medium heat and add butter or oil to coat the surface.
  2. Pour about 1/4 cup of batter onto the skillet and cook until bubbles form on the surface; then flip and cook until golden brown.
  3. Serve warm with syrup, butter, or desired toppings.

Notes

For added variety, consider making cinnamon churro pancakes or adding toppings like chocolate chips or fresh fruit. Store leftovers in an airtight container in the fridge for up to three days.
