  • 2 lbs Chicken breasts, sliced
  • 1 tbsp Lemon juice
  • 2 tbsp Fresh parsley, chopped
  • 1 large Egg
  • 1 cup All-purpose flour
  • Salt to taste
  • Pepper to taste
  • 1/4 cup Avocado oil or olive oil
  • 1 cup Panko bread crumbs
  • 1 cup Mozzarella cheese, shredded
  • 1/2 cup Romano cheese, grated

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a shallow bowl, whisk together the egg and lemon juice.
  3. In another bowl, mix the flour, salt, and pepper.
  4. In a third bowl, combine panko bread crumbs with chopped parsley and both cheeses.
  5. Dredge the chicken slices in the flour mixture, dip them in the egg mixture, and then coat generously with the bread crumb mixture.
Cooking
  1. Heat the oil in a skillet over medium heat, adding the chicken pieces once hot. Cook until golden brown on both sides.
  2. Transfer the cooked chicken to a baking dish and place it in the oven for 15-20 minutes, or until thoroughly cooked.

Notes

For best results, pound the chicken breasts to an even thickness, and feel free to experiment with different cheeses or add spices to the breadcrumb mixture for added flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
