Ingredients
  

Cookies
  • 2 large large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cups brown sugar Packed
  • 1/2 cup granulated sugar
  • 1 tsp salt
  • 1 2/3 tbsp vanilla extract
  • 1 cup graham crackers, crushed
  • 1 cup unsalted butter, softened
Frosting
  • 8 oz cream cheese, softened
  • 1/2 cup heavy whipping cream
  • 2 cups powdered sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the flour, baking powder, baking soda, and salt, mixing well.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth.
  4. Add the eggs and vanilla extract to the butter mixture, beating until well combined.
  5. Gradually add the flour mixture to the wet ingredients, stirring until just incorporated.
  6. Fold in the crushed graham crackers.
  7. Form balls of dough and place them on a baking sheet lined with parchment paper, leaving space between each.
Baking
  1. Bake for 10-12 minutes or until the cookies are golden.
  2. Allow them to cool slightly before transferring to a wire rack to cool completely.
Frosting
  1. For the cream cheese frosting, whip together the cream cheese, heavy whipping cream, and powdered sugar until smooth and creamy.
  2. Once the cookies are fully cooled, spread the frosting on top and drizzle with salted caramel.

Notes

Store in an airtight container at room temperature for up to one week. Freeze un-frosted cookies for up to three months.
