Ingredients
  

For the cookie dough
  • 1 cup salted butter, room temperature Make sure butter is at room temperature for easier mixing.
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 pieces eggs Add one at a time during mixing.
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour Can be substituted with gluten-free flour.
  • 3/4 cup yellow cornmeal
  • 1 TB honey
  • 2 tsp baking powder
For the frosting
  • 1/2 cup softened butter
  • 2 cups powdered sugar
  • 2 TB honey
  • 1 tsp vanilla extract
  • to thin as needed heavy cream or milk Add a tablespoon at a time until desired consistency is reached.

Method
 

Preparing the Cookie Dough
  1. In a stand mixer, combine 1 cup salted butter with 3/4 cup light brown sugar and 1/4 cup granulated sugar. Mix until fluffy.
  2. Add in the eggs one at a time, then blend in 1 tsp vanilla extract and 1 TB honey.
  3. In a separate bowl, whisk together 1 3/4 cups all-purpose flour, 3/4 cup yellow cornmeal, and 2 tsp baking powder. Gradually add this to the mixer bowl, mixing until just combined. It’s essential not to overmix!
  4. Chill the dough for 10-15 minutes for better texture.
Baking the Cookies
  1. Preheat the oven to 350°F.
  2. Using about 1/4 cup of dough for each cookie, roll into balls and flatten them slightly on a cookie sheet lined with parchment paper.
  3. Bake for about 14 minutes until lightly golden. Let them cool completely on a wire rack.
Making the Frosting
  1. Mix 1/2 cup softened butter until fluffy, then slowly add in 2 cups powdered sugar.
  2. Mix in 2 TB honey and 1 tsp vanilla extract. If necessary, add heavy cream or milk a tablespoon at a time until desired consistency is reached.
Frosting the Cookies
  1. Use a mini scoop to place a dollop of frosting on top of each cookie, and drizzle with honey for that extra touch!

Notes

These cookies are versatile! Serve them warm with tea or coffee, or try pairing them with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to a week or freeze for longer storage. Don't skip the chilling step for better cookie shape.
