Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the unsalted butter and brown sugar until it's light and fluffy.
- Beat in the eggs and pour in the vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, corn starch, cinnamon, and salt until well blended.
- Gradually add the dry mix to the wet ingredients, stirring just until everything is combined. Don’t overmix for a fluffy texture!
- Scoop the dough and roll it into balls. For an extra treat, you can coat them in a mixture of granulated sugar and additional cinnamon.
- Arrange the dough balls on baking sheets lined with parchment paper, giving them room to spread.
Baking
- Bake for approximately 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
