  • 1.125 cups Brown sugar Packed
  • 4.5 tsp Cinnamon
  • 2 tbsp Corn starch
  • 0.75 cup Granulated sugar
  • 0.5 tsp Salt
  • 3.25 cups Powdered sugar
  • 5 tsp Vanilla
  • 2 cups Unsalted butter Softened to room temperature
Coating
  • 0.5 cup Granulated sugar For coating
  • 1 tsp Cinnamon For coating

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the unsalted butter and brown sugar until it's light and fluffy.
  3. Beat in the eggs and pour in the vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, corn starch, cinnamon, and salt until well blended.
  5. Gradually add the dry mix to the wet ingredients, stirring just until everything is combined. Don’t overmix for a fluffy texture!
  6. Scoop the dough and roll it into balls. For an extra treat, you can coat them in a mixture of granulated sugar and additional cinnamon.
  7. Arrange the dough balls on baking sheets lined with parchment paper, giving them room to spread.
Baking
  1. Bake for approximately 10-12 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool slightly on the baking sheet before transferring them to a wire rack to cool completely.
  3. Dust your warm cookies with powdered sugar before serving. Enjoy every scrumptious bite!
