  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup funfetti sprinkles
For the cream cheese frosting
  • 1 cup cream cheese, softened
  • 2 cups powdered sugar
  • 1 tablespoon milk
  • 1/2 cup additional rainbow sprinkles for topping

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt; gradually blend this dry mixture into the creamed mixture.
  5. Gently fold in the funfetti sprinkles until evenly distributed throughout the dough.
  6. Use a tablespoon to scoop out dough balls and place them onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes or until lightly golden.
  2. Allow the cookies to cool completely on a wire rack.
Frosting
  1. For the frosting, beat the cream cheese, powdered sugar, and milk together until smooth and creamy.
  2. Once the cookies are cool, frost each cookie with cream cheese icing and top with additional sprinkles.
