  • 1 lb Skinless, boneless chicken breasts
  • 16 oz Fresh gnocchi (store-bought or homemade)
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 2 cups Fresh spinach
  • 1 tbsp Italian seasoning
  • to taste Salt and pepper

Method
 

Preparation
  1. Start by placing the chicken breasts at the bottom of the crockpot.
  2. Add the diced carrots, celery, and onion. Stir in the minced garlic.
  3. Pour in the chicken broth and season with Italian seasoning, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
  5. Once the chicken is done, remove it and shred it with two forks; return it to the pot.
  6. Stir in the fresh gnocchi and heavy cream. Add the spinach as well.
  7. Cook on high for another 30 minutes, until the gnocchi are tender.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

For best results, consider using diced chicken thighs for richer flavor. Chill any leftovers and store in an airtight container for up to three days. Reheat gently and add a splash of broth if necessary.
