Preparation
- Remove the puff pastry from the freezer and unwrapping it. Place on a floured surface to thaw.
- In a large saucepan over medium heat, combine diced apples, lemon juice, granulated sugar, brown sugar, cinnamon, and nutmeg. Mix until bubbling.
- In a small container, mix water and flour, then pour into the pot. Boil while stirring until apples are softened, about 5 minutes. Stir in vanilla and set aside to cool.
Assembly and Cooking
- Heat 1 to 2 inches of oil in a heavy-bottomed pan to 350°F.
- Cut each thawed pastry sheet into 3 equal strips and lay horizontally on a floured surface.
- Place 1/4 cup apple filling on the left half of each strip. Moisten edges, fold over, and press with a fork to seal.
- Fry the pies one or two at a time for 3 to 4 minutes, flipping halfway through, until golden brown and crispy.
- Drain on paper towels and sprinkle with a mixture of sugar and cinnamon.
Notes
Serve with vanilla ice cream or drizzle with caramel or chocolate sauce. Store in an airtight container in the refrigerator for 3-4 days, or freeze after cooling.
