  • 2 cups shredded chicken Store-bought rotisserie chicken works well.

  • 1/2 cup red onion, chopped Red onion adds sweetness.

Preparation
  1. In a large bowl, combine the Greek yogurt, lemon juice, minced garlic, and fresh dill or parsley to prepare the tzatziki sauce.
  2. Gently fold in the shredded chicken, diced cucumber, and chopped red onion until well mixed.
  3. Season generously with salt and pepper to taste.
  4. Serve chilled, either on a bed of mixed greens or in a bowl.

Notes

Serve with toasted pita chips or fresh vegetables for dipping, or use as a filling for wraps or sandwiches. Store leftovers in an airtight container in the refrigerator for up to 3 days.
