Ingredients
  

Pasta and Vegetables
  • 8 ounces pasta (fusilli or rotini)
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumbers
  • 1/2 cup red onion, finely chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup black olives, sliced
Dressing
  • 1 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
Garnish
  • Fresh parsley for garnish

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and rinse the pasta under cold water until it's cool.
  2. In a large bowl, combine the cooked pasta with cherry tomatoes, cucumbers, red onion, bell peppers, and black olives.
Dressing
  1. In a separate bowl, mix the mayonnaise, lemon juice, garlic powder, salt, and pepper until smooth.
Mixing
  1. Pour the dressing over the pasta salad and toss everything until well coated.
  2. Chill the pasta salad for at least 1 hour before serving to allow the flavors to meld together.
  3. Garnish with fresh parsley before serving for an extra touch of color.

Notes

To store leftovers, keep the salad in an airtight container in the fridge for up to 3 days. It’s best enjoyed fresh, so consider keeping the dressing separate until ready to serve.
