  • 2 cups cooked chicken, shredded Shredded rotisserie chicken is recommended for flavor.
  • 1 cup mayonnaise Can be substituted with Greek yogurt for a lighter version.
  • 1/2 cup dried cranberries
  • 1/2 cup sliced almonds Can use walnuts or pecans as alternatives.
  • 1/4 cup diced celery
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine shredded chicken, mayonnaise, dried cranberries, sliced almonds, diced celery, and Dijon mustard.
  2. Mix well until all ingredients are coated.
  3. Season with salt and pepper to taste.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Notes

Serve on croissants, with fresh fruit, or over greens. Can be used as a dip for crackers or veggie sticks.
