- In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until there’s no pink visible.
- Next, add the onion, garlic, carrots, and celery. Cook these vegetables until they are softened.
- Stir in the chicken broth and bring the mixture to a boil.
- Add the gnocchi and cook according to package instructions until they are tender.
- Stir in the spinach and heavy cream, seasoning with Italian seasoning, salt, and pepper.
- Allow the soup to simmer for about 5-10 minutes before serving it warm.
Notes
To enhance flavor, add a pinch of red pepper flakes for heat or splash of lemon juice for freshness. To store, keep in an airtight container in the fridge for up to 3 days. For freezing, do so without the cream.
