Ingredients
  

Main Ingredients
  • 1 lb chicken breast, diced Use boneless for easier preparation.
  • 1 cup potato gnocchi Frozen gnocchi can also be used.
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup spinach Could be substituted with kale.
  • 1/2 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream For a lighter version, use low-fat milk.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 2 tablespoons Olive oil For sautéing.

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat. Add the diced chicken and cook until there’s no pink visible.
  2. Next, add the onion, garlic, carrots, and celery. Cook these vegetables until they are softened.
  3. Stir in the chicken broth and bring the mixture to a boil.
  4. Add the gnocchi and cook according to package instructions until they are tender.
  5. Stir in the spinach and heavy cream, seasoning with Italian seasoning, salt, and pepper.
  6. Allow the soup to simmer for about 5-10 minutes before serving it warm.

Notes

To enhance flavor, add a pinch of red pepper flakes for heat or splash of lemon juice for freshness. To store, keep in an airtight container in the fridge for up to 3 days. For freezing, do so without the cream.
