Preparation
- In a blender or food processor, combine the garlic, chipotle chilies, lime juice, avocado oil, oregano, black pepper, paprika, sea salt, and cumin. Blend until smooth.
- Place the chicken thighs in a large bowl and pour the marinade over them, ensuring they are well coated. Marinate for at least 30 minutes, preferably longer for more flavor.
Cooking
- Preheat a grill or skillet over medium-high heat.
- Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F).
- Remove from heat and let rest for a few minutes before slicing.
Notes
For deeper flavor, marinate the chicken overnight. You can swap lime juice for orange juice for a different citrus taste. Don't skip the resting step for juicier chicken.
