  • 2 lbs Chicken thighs, boneless skinless
  • 3 cloves Garlic
  • 1 tsp Oregano, ground
  • 1/3 cup Red onion, chopped
  • 2 chilies Chipotle chilies in adobo sauce
  • 2 tbsp Lime juice, fresh
  • 2 tbsp Avocado oil
  • 1/2 tsp Black pepper
  • 2 tsp Paprika
  • 1/2 tsp Sea salt
  • 1 tsp Cumin, ground

Method
 

Preparation
  1. In a blender or food processor, combine the garlic, chipotle chilies, lime juice, avocado oil, oregano, black pepper, paprika, sea salt, and cumin. Blend until smooth.
  2. Place the chicken thighs in a large bowl and pour the marinade over them, ensuring they are well coated. Marinate for at least 30 minutes, preferably longer for more flavor.
Cooking
  1. Preheat a grill or skillet over medium-high heat.
  2. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F).
  3. Remove from heat and let rest for a few minutes before slicing.

Notes

For deeper flavor, marinate the chicken overnight. You can swap lime juice for orange juice for a different citrus taste. Don't skip the resting step for juicier chicken.
