Ingredients
  

For the Chicken Marinade
  • 2 lb Chicken thighs, boneless skinless
  • 7 oz Chipotle peppers in adobo sauce Use more or less depending on spice preference
  • 6 cloves Garlic Minced
  • 1 tbsp Lime juice Freshly squeezed
  • 1 tbsp All-purpose adobo seasoning
  • 1 tsp Cumin, ground
  • 2 1/8 cups Coriander
  • 5 tsp Onion powder
  • 1 tbsp Oregano, dried
For the Bowl
  • 6 cups Rice, cooked long grain
  • 3 large Avocados Diced
  • 3 cans Black beans Heated
  • 36 oz Sweet corn, frozen Heated
  • 1 1/2 heads Romaine lettuce, chopped
  • 3 Jalapenos deseeded and diced About 2/3 cup
  • 1 1/4 cup Red onion, chopped
  • 1/2 large White onion, chopped
  • 1 1/2 cups Pico de gallo, store-bought or homemade
  • 3/4 cup Sour cream
  • 1 1/2 lb Monterey jack cheese, shredded
  • 3 tbsp Olive oil
  • 1 tsp Chili powder
  • 3 1/3 tbsp Salt Adjust to taste
  • 1 tsp Salt, coarse

Method
 

Marinating the Chicken
  1. Start by marinating the chicken thighs with chipotle peppers in adobo sauce, minced garlic, lime juice, and your choice of spices like cumin, coriander, onion powder, and oregano.
  2. Let this flavor-packed mixture sit for about an hour.
Cooking the Rice and Chicken
  1. While waiting, cook the rice and mix it with chopped cilantro and a little lime juice for extra freshness.
  2. Heat a skillet over medium heat, and cook the marinated chicken until it’s fully cooked.
  3. After cooking, remove it from the skillet and let it rest for a few minutes before slicing it into bite-sized pieces.
Heating the Beans and Corn
  1. In the same skillet, warm the black beans and corn, allowing the flavors to meld.
Preparing the Toppings
  1. Prepare your toppings: dice the avocados, chop the jalapenos, lettuce, and prepare the pico de gallo and sour cream.
Assembling the Burrito Bowl
  1. To assemble your burrito bowl, start with a bed of rice, add slices of chicken on top, and then layer in your black beans, corn, and assorted toppings.
  2. Finish with shredded cheese, a squeeze of lime, and serve with tortilla chips on the side.

Notes

Store leftover components separately in airtight containers for up to three days. Add fresh toppings just before serving for the best texture and flavor.
