Ingredients
  

Main Ingredients
  • 1 pound chicken tenderloins Use fresh for best taste
  • 1 cube chicken bouillon
  • 1 tablespoon plus 1 teaspoon dry ranch dressing mix Split between cooking and mixing
  • 2 cups water
  • 1 cup mayonnaise Can substitute with dairy-free alternative
  • 1 stalk celery Can be replaced with finely diced onions

Method
 

Cooking
  1. In a pan over medium-high heat, combine the chicken tenderloins, bouillon cube, 1 tablespoon of ranch dressing mix, and 2 cups of water.
  2. Bring to a boil and let it simmer for about 10 minutes.
  3. After cooking, remove the chicken tenderloins and shred them using two forks.
Mixing
  1. In a mixing bowl, combine the shredded chicken with mayonnaise and grated celery.
  2. Sprinkle in the remaining 1 teaspoon of ranch dressing mix and stir until well incorporated.
  3. Cover and chill in the refrigerator for at least 1 hour before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. For freezing, leave out the mayonnaise until ready to serve. Try adding diced grapes or apples for a touch of sweetness, or nuts for extra crunch.
