  • 1/4 cup finely chopped onion
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon pepper Adjust to taste.
  • 1/4 cup sliced almonds Optional for added crunch.

  1. Shred the rotisserie chicken in a large bowl, ensuring there are no large pieces.
  2. In a separate bowl, mix together mayonnaise, barbecue sauce, yellow mustard, salt, and pepper until smooth.
  3. Add chopped celery and onion, then gently fold the mayo mixture into the shredded chicken.
  4. Taste the chicken salad and adjust seasoning if necessary, adding more barbecue sauce for a smokier flavor if desired.
  5. If using, fold in sliced almonds for added texture.
  6. Serve immediately or chill in the refrigerator for about 30 minutes to enhance the flavors.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Keep any mix-ins separate until just before serving to maintain crunch. Shredding the chicken while it's warm will make for easier handling.
