Ingredients

  • 2 pieces boneless skinless chicken breasts
  • 1 cup dill pickle juice for marinating
For the coating
  • 1 large egg for dipping
  • 1 cup milk for dipping
  • 1 cup all-purpose flour
  • 1 tbsp confectioners' sugar adds a touch of sweetness
  • 1 tsp paprika adds flavor and color
  • 1 tsp pepper to taste
  • 1 tsp salt to taste
  • Peanut oil or canola oil for frying

Method
 

Marinating the Chicken
  1. In a mixing bowl, combine dill pickle juice and chicken breasts. Marinate in the fridge for at least 30 minutes.
Preparing the Coating
  1. In another bowl, whisk together the egg and milk.
  2. In a separate shallow dish, mix the flour, confectioners' sugar, paprika, pepper, and salt.
Coating and Frying the Nuggets
  1. Remove chicken from the marinade and dip each piece first in the egg mixture and then in the flour mixture, ensuring they are well coated.
  2. Heat oil in a deep skillet or fryer to 350°F (175°C).
  3. Fry the chicken nuggets in batches until golden brown and cooked through, about 3-4 minutes per side.
  4. Drain on paper towels and serve hot.
