  • 1/2 cup dill pickle juice
  • 1/4 cup nonfat milk (or your choice)
  • 1 tbsp olive oil
  • 1 tbsp brown sugar
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp kosher salt
  • 1/2 tsp paprika
For the Sandwich Assembly
  • 4 pieces multigrain brioche buns (or white buns)
  • 4 leaves lettuce
  • 1 piece tomato, sliced
  • 1/4 cup dill pickles, sliced (chip style)

Method
 

Preparation
  1. Cut the chicken horizontally into four equal pieces. Lightly pound each piece to ensure uniform thickness.
  2. In a large bowl, whisk together the pickle juice, milk, olive oil, brown sugar, garlic powder, onion powder, black pepper, salt, and paprika until well-combined.
  3. Add the chicken pieces to the marinade, ensuring they are fully submerged, and let them marinate for at least eight hours.
Cooking
  1. Preheat your grill.
  2. Remove the chicken from the marinade, letting any excess drip off.
  3. Grill the chicken for about 4-5 minutes on each side, or until fully cooked (internal temperature should reach 165°F).
Assembly
  1. Toast the buns lightly.
  2. On each bun, place the grilled chicken, followed by lettuce, tomato slices, and pickles. Customize with sauces or dressings of your choice.

Notes

For an even better flavor, consider marinating the chicken overnight. You can also pound the chicken thinner to cook it faster. Don't skip the marinating step; it's crucial for achieving a juicy, flavorful chicken.
