Method

Preparation
  1. In a large bowl, combine the honey, molasses, and warm water. Stir until dissolved.
  2. Add the yeast and let it sit for about 10 minutes until frothy.
  3. In another bowl, mix the bread flour, whole wheat flour, cornmeal, cocoa powder, brown sugar, salt, and sugar.
  4. Gradually add the flour mixture to the yeast mixture, followed by the canola oil.
  5. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth.
  6. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1-2 hours.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Punch down the dough and shape it into a loaf. Place it in a greased loaf pan.
  3. Let it rise again for about 30 minutes.
  4. Bake in the preheated oven for 30-35 minutes until the bread sounds hollow when tapped.
  5. Allow to cool slightly before slicing and serve.

Notes

For a crustier exterior, try placing a pan of water in the oven while baking. This helps create steam.
