Preparation
- In a large bowl, combine the honey, molasses, and warm water. Stir until dissolved.
- Add the yeast and let it sit for about 10 minutes until frothy.
- In another bowl, mix the bread flour, whole wheat flour, cornmeal, cocoa powder, brown sugar, salt, and sugar.
- Gradually add the flour mixture to the yeast mixture, followed by the canola oil.
- Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth.
- Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1-2 hours.
Baking
- Preheat the oven to 350°F (175°C).
- Punch down the dough and shape it into a loaf. Place it in a greased loaf pan.
- Let it rise again for about 30 minutes.
- Bake in the preheated oven for 30-35 minutes until the bread sounds hollow when tapped.
- Allow to cool slightly before slicing and serve.
Notes
For a crustier exterior, try placing a pan of water in the oven while baking. This helps create steam.
