Ingredients
  

Pasta and Seasoning
  • 8 oz Rotini or elbow macaroni Cook until al dente
  • 2 tbsp Taco seasoning Use your favorite brand or homemade
Fresh Vegetables
  • 1 cup Bell peppers, diced
  • 1 cup Cherry tomatoes, halved
  • 1 cup Corn, canned or fresh
  • 1/2 cup Green onions, sliced
Dressing
  • 1 cup Catalina dressing Tangy dressing that adds flavor

Method
 

Preparation
  1. Cook the pasta according to the package instructions. Once done, drain and let it cool.
  2. In a large bowl, combine the cooled pasta with taco seasoning, fresh vegetables, and Catalina dressing.
  3. Toss everything together well to ensure an even coating of dressing.
Serving
  1. Serve it chilled as a side dish or enjoy it as a main course.

Notes

Store in an airtight container in the refrigerator, best eaten within three days. Stir before serving if dressing settles.
