  • 1 cup fresh mango, diced Can substitute with other seasonal fruits.
  • 1/4 cup toasted coconut flakes

Method
 

Preparation
  1. In a bowl, whisk together the coconut milk, chia seeds, sweetener, and vanilla extract.
  2. Let the mixture sit for about 5 minutes, then whisk again to prevent clumping.
  3. Cover and refrigerate for at least 2 hours or overnight to allow the pudding to thicken.
Serving
  1. When ready to serve, top with diced mango and toasted coconut.
