  • 2 cups Cooked chicken (diced) Use leftover or rotisserie chicken for best flavor.
  • 1 cup Mayonnaise Can substitute with dairy-free alternatives.
  • 1 cup Celery (finely chopped) Chop finely for even distribution.
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/3 cup Sweet pickle relish Substitute with chopped pickles if preferred.
  • 1/4 cup Diced onion (optional) Add for extra flavor.

Method
 

Preparation
  1. Cook your chicken and let it cool, then chop into bite-sized pieces.
  2. In a large bowl, combine the chopped chicken, finely chopped celery, mayonnaise, salt, pepper, and sweet pickle relish.
  3. Stir the mixture until well combined.
  4. For best flavor, cover and refrigerate for at least 30 minutes.
  5. Serve chilled and enjoy!

Notes

Best served on a bed of lettuce, in a sandwich, or as a dip. Store leftovers in an airtight container for up to three days or freeze for longer storage.
