Ingredients
  

Steak and Dressing
  • 1 pound Steak (flank or sirloin) Choose according to preference
  • 1/4 cup Fresh cilantro, chopped Can substitute with parsley if preferred
  • 1 juice Lime Freshly squeezed for best flavor
  • 1 tablespoon Olive oil For cooking the steak
  • Salt To taste Season to preference
  • Pepper To taste Season to preference
Vegetable Toppings
  • 1 cup Bell peppers, sliced Any color bell pepper will work
  • 1 cup Corn, cooked Fresh or frozen is fine
  • 1 medium Avocado, sliced Optional, for creaminess
  • 2 cups Cooked rice (white or brown) Use your preferred type of rice

Preparation
  1. Season the steak with salt and pepper, drizzle with olive oil.
  2. Heat a skillet over medium-high heat, then cook the steak for about 4-5 minutes on each side, or to your preferred doneness.
  3. Remove the steak from the skillet and let it rest for a few minutes before slicing it thinly.
  4. In a small bowl, combine chopped cilantro, lime juice, salt, and pepper to create a refreshing dressing.
Assembly
  1. Assemble your bowls by placing a generous serving of cooked rice at the bottom.
  2. Top with sliced steak, a variety of fresh vegetables, and drizzle the cilantro lime dressing over everything.
  3. For an extra touch, garnish with more cilantro and lime wedges before serving.

Notes

Store any uneaten portions in airtight containers in the refrigerator for up to 3 days. Reheat the steak over low heat and warm the rice and veggies in the microwave. Avoid reheating too many times.
