Ingredients
  

Main Ingredients
  • 1 cup long-grain white rice Alternatively, you can use brown rice or quinoa.
  • 2 cups water or broth
  • 1 fresh lime (juiced) Zest can be added for extra flavor.
  • 1/2 cup fresh cilantro (chopped) Can substitute with parsley or green onions.
  • to taste salt

Method
 

Cooking the Rice
  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rice and water (or broth) in a medium saucepan and bring to a boil over high heat.
  3. Once boiling, reduce to low heat, cover, and let simmer for about 18 minutes.
Final Mixing
  1. After the rice is cooked, remove it from heat and let it sit covered for an additional 5 minutes.
  2. Fluff the rice with a fork and add lime juice, chopped cilantro, and salt to taste. Stir gently to combine all the flavors evenly.

Notes

To store, keep in an airtight container in the fridge for 4-5 days. Can be frozen in portions; reheat with a splash of water.
