  • 2 cups long-grain white rice Rinsed under cold water
  • 4 cups water
  • 1/4 cup fresh cilantro, chopped For stirring in after cooking
  • 2 tablespoons lime juice Preferably freshly squeezed
  • 1 teaspoon salt
  • 1 tablespoon olive oil For flavor and moisture

Method
 

Preparation
  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a saucepan, combine the rice, water, and salt. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low, cover, and let it simmer for about 18-20 minutes, or until the rice is tender and the water has been absorbed.
  4. Remove from heat and allow the rice to sit covered for 5 minutes.
  5. Fluff the rice with a fork and gently stir in the olive oil, lime juice, and chopped cilantro.
  6. Serve warm as a delightful side dish.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days, or freeze in a freezer-safe bag. Reheat adding a splash of water.
