Preparation
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a saucepan, combine the rice, water, and salt. Bring to a boil over high heat.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 18-20 minutes, or until the rice is tender and the water has been absorbed.
- Remove from heat and allow the rice to sit covered for 5 minutes.
- Fluff the rice with a fork and gently stir in the olive oil, lime juice, and chopped cilantro.
- Serve warm as a delightful side dish.
Notes
Store leftovers in an airtight container in the refrigerator for about 3-4 days, or freeze in a freezer-safe bag. Reheat adding a splash of water.
