  • 1 cup long grain basmati rice You can substitute with jasmine rice or quinoa.
  • 2 cups chicken stock or vegetable stock Use vegetable stock for a vegetarian version.
  • 2 teaspoons olive oil Used for sautéing the rice.
  • 1 pinch salt Adjust to taste.
  • 1 tablespoon butter Optional, but recommended for creaminess.
  • 2 tablespoons lime juice Freshly squeezed for best flavor.
  • 1 lime zest Zest of one lime.
  • 1 cup cilantro leaves Finely chopped.

Preparation
  1. Rinse the rice several times to remove excess starch and any dirt, which is crucial for achieving fluffy rice.
  2. In a heavy-bottom saucepan, heat olive oil over medium heat. Add the rinsed rice and sauté until it begins to turn golden brown.
  3. Once browned, add the chicken or vegetable stock, maintaining a 1:2 ratio of rice to liquid.
  4. Bring the mixture to a boil, then reduce the heat to medium-low. Cook uncovered until the water level drops below the rice.
  5. Cover the saucepan and reduce heat to low, cooking for 12 minutes undisturbed.
  6. After cooking, let the rice sit covered for 5-10 minutes to allow it to steam.
  7. Finally, add the butter, lime juice, chopped cilantro, and lime zest. Gently fluff the rice with a fork or spatula and season with salt to taste.

Notes

Serve in a deep bowl garnished with extra cilantro or lime wedges. Pairs beautifully with grilled chicken, fish tacos, or as a base for burrito bowls.
