- Rinse the rice several times to remove excess starch and any dirt, which is crucial for achieving fluffy rice.
- In a heavy-bottom saucepan, heat olive oil over medium heat. Add the rinsed rice and sauté until it begins to turn golden brown.
- Once browned, add the chicken or vegetable stock, maintaining a 1:2 ratio of rice to liquid.
- Bring the mixture to a boil, then reduce the heat to medium-low. Cook uncovered until the water level drops below the rice.
- Cover the saucepan and reduce heat to low, cooking for 12 minutes undisturbed.
- After cooking, let the rice sit covered for 5-10 minutes to allow it to steam.
- Finally, add the butter, lime juice, chopped cilantro, and lime zest. Gently fluff the rice with a fork or spatula and season with salt to taste.
Notes
Serve in a deep bowl garnished with extra cilantro or lime wedges. Pairs beautifully with grilled chicken, fish tacos, or as a base for burrito bowls.
