  • 2 tablespoons soy sauce Low-sodium option available.
  • 1 tablespoon vegetable oil For cooking.
Vegetables and Aromatics
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 cup mixed vegetables (carrots, bell peppers, snow peas, etc.) Feel free to customize with your favorite vegetables.
  • Salt and pepper to taste
Garnish
  • green onions, sliced For garnish before serving.

Preparation
  1. Cook the chow mein noodles according to package instructions; drain and set aside.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the minced garlic and ginger, stirring for about 30 seconds until fragrant.
  3. Add the mixed vegetables, stir-frying for 3-4 minutes until they are crisp-tender.
  4. Toss in the cooked noodles and soy sauce, mixing everything until well combined and heated through.
  5. Season with salt and pepper to your taste.
  6. Garnish with sliced green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a skillet over low heat. Feel free to switch up vegetables and proteins for variety.
