  • 1/2 cup butter (room temp) Ensure it's at room temperature.
  • 3 large eggs
  • 2 tablespoons light corn syrup
  • 1 tablespoon pure vanilla extract
  • 2/3 cup heavy cream
Dry Ingredients
  • 3 3/4 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 tablespoon cornstarch
  • 2 teaspoons baking soda
  • 1 teaspoon Kosher salt
Sugars
  • 1/2 cup light brown sugar (packed)
  • 1/2 cup white granulated sugar
Chocolate Chips
  • 2 cups semi-sweet chocolate chips
  • 1/3 cup rainbow-coated chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Line your cookie sheets with parchment paper for easy cleanup.
  3. In a large bowl, combine the flour, cocoa powder, cornstarch, baking soda, and salt; whisk to mix and set aside.
  4. In another bowl, cream together the butter, white granulated sugar, and brown sugar using an electric mixer until light and fluffy.
  5. Add in the eggs, corn syrup, and vanilla extract, mixing until well combined.
Mixing
  1. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  2. Fold in the heavy cream and chocolate chips.
Baking
  1. Drop spoonfuls of dough onto the prepared cookie sheets.
  2. Bake for about 10-12 minutes or until the cookies are set.
  3. Allow to cool before serving.

Notes

Store in an airtight container at room temperature for up to a week. Freeze cookie dough or baked cookies for longer storage. Chilling the dough for an hour enhances flavor and texture.
