Ingredients
  

For the Chicken
  • 2 pieces boneless, skinless chicken breasts Grilled until fully cooked
  • 1 tablespoon chipotle seasoning For seasoning the chicken
  • 1 tablespoon olive oil Used for marinating chicken
  • Salt and pepper to taste salt and pepper For seasoning
For the Burrito
  • 4 large flour tortillas For wrapping the burrito
  • 1 cup cooked rice Base layer inside the burrito
  • 1 cup black beans Rinsed and drained
  • 1 cup corn Drained
  • 1 cup shredded lettuce Fresh topping
  • 1 cup diced tomatoes Fresh topping
  • 1/2 cup shredded cheese Cheddar or Mexican blend
  • 1/2 cup chipotle ranch dressing For drizzling

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with chipotle seasoning, olive oil, salt, and pepper.
  3. Grill the chicken for 6-7 minutes on each side until fully cooked.
  4. Remove from the grill and let rest before slicing.
  5. Warm the tortillas on the grill for a few seconds on each side.
Assembly
  1. Assemble each burrito by layering rice, black beans, corn, grilled chicken, lettuce, tomatoes, cheese, and drizzle with chipotle ranch dressing.
  2. Roll the burrito tightly, folding in the sides, and serve with additional chipotle ranch dressing if desired.

Notes

For best flavor, let the chicken marinate in the chipotle seasoning and olive oil for about 30 minutes before grilling. Customize your burrito with toppings of your choice.
