Ingredients
  

For the Chicken
  • 2 pieces Chicken breasts (boneless, skinless) Use fresh or thawed chicken
  • 2 tablespoons Olive oil For marinating
  • 1 teaspoon Chipotle chili powder Adjust according to heat preference
  • 1 tablespoon Fresh lime juice Freshly squeezed is best
  • 2 cloves Garlic Minced
  • to taste Salt and pepper Adjust to preference
For the Salad
  • 4 cups Mixed salad greens (like romaine, spinach, or arugula) Use your preferred mix
  • 1 cup Cherry tomatoes Halved
  • 1 cup Corn (fresh or canned) Drained if using canned
  • 1 piece Avocado Diced
  • 1/4 cup Cilantro Chopped for garnish
Optional Toppings
  • to taste Shredded cheese Use your favorite type
  • to taste Tortilla strips For added crunch
  • to taste Dressing of choice Use lime juice and olive oil if desired

Method
 

Marinating the Chicken
  1. In a bowl, combine olive oil, chipotle chili powder, lime juice, minced garlic, salt, and pepper.
  2. Add the chicken breasts and let them marinate for at least 15 minutes.
Cooking the Chicken
  1. Grill or sauté the marinated chicken over medium heat for 6-8 minutes per side, or until cooked through.
  2. Remove from heat and let it rest for a few minutes before slicing it into strips.
Assembling the Salad
  1. In a large bowl, combine mixed salad greens, halved cherry tomatoes, corn, and diced avocado.
  2. Toss lightly to mix in the ingredients.
Final Assembly
  1. Place the sliced chicken on top of the salad.
  2. Drizzle with dressing, using the remaining marinade or create your own with lime juice, olive oil, and additional seasoning.
  3. Top with chopped cilantro and any optional items like cheese or tortilla strips for added texture.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep dressing separate until ready to serve.
