  • 2 pieces chicken breasts Can be substituted with chicken thighs for richer flavor.
  • 1/4 cup honey
  • 1/4 cup soy sauce Use low-sodium soy sauce if preferred.
  • 1 tablespoon chipotle in adobo sauce Adjust according to heat preference.
  • 1 clove garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 1 tablespoon olive oil For cooking.

Method
 

Preparation
  1. In a bowl, mix honey, soy sauce, chipotle in adobo sauce, minced garlic, ground cumin, paprika, salt, and pepper.
  2. Marinate the chicken breasts in the mixture for at least 30 minutes, preferably a few hours.
Cooking
  1. Preheat a skillet over medium-high heat and add olive oil.
  2. Remove the chicken from the marinade and cook in the skillet for 6-7 minutes on each side, or until cooked through and nicely caramelized.
  3. Let the chicken rest for a few minutes before slicing.
Serving
  1. Serve with your choice of sides such as rice, salad, or tacos. Optionally top with avocado slices or a drizzle of extra honey.

Notes

For best flavor, allow chicken to marinate overnight. Consider adding cayenne pepper for extra heat. This recipe can be grilled for a smoky flavor. Store leftovers in an airtight container for up to three days.
