  • 1 jalapeño, seeded and minced

  • 1 lime (Juice of 1 lime)

  1. Combine the corn, diced red bell pepper, finely chopped red onion, minced jalapeño, and chopped cilantro in a large bowl.
  2. Squeeze the fresh lime juice over the mixture, allowing the tangy flavor to meld with the veggies.
  3. Season generously with salt and pepper to taste, ensuring each ingredient is well-balanced.

  5. If you prefer a more developed flavor, you can chill in the fridge for about 30 minutes before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, omit the cilantro and add it fresh after thawing for the best taste and texture. Adjust heat levels to your preference by modifying the amount of jalapeño used.
