Main Ingredients
  • 2 cups Corn, frozen Fresh corn can be used if in season.
  • 1/4 cup Cilantro, chopped
  • 1/4 cup Red onion, finely chopped
  • 2 tbsp Lime juice, fresh
  • 1/2 tsp Salt
  • 1/2 Small jalapeño, seeded and pith removed, finely chopped Adjust for spice preference.

Preparation
  1. In a mixing bowl, combine the frozen corn, chopped red onion, finely chopped jalapeño, fresh lime juice, and salt.
  2. Chop the cilantro and add it to the bowl.
  3. Mix all the ingredients until well combined.
  4. Serve immediately or refrigerate for a few minutes to let the flavors meld.

Notes

Store any leftovers in an airtight container in the refrigerator. Best consumed within 2-3 days. Can be frozen, but texture may change upon thawing. For creative twists, try adding diced mango, pineapple, or other peppers.
