Salsa Ingredients
  • 1 lb Frozen Corn (thawed) Alternatively, use fresh corn on the cob.
  • 1/4 cup Red Onion (finely chopped)
  • 1 Jalapeno Pepper (seeded and diced) Adjust for desired spice level.
  • 1/3 cup Cilantro (chopped) Can substitute with parsley or green onions for variation.
  • 1 tbsp Lemon Juice
  • 1 tbsp Lime Juice
  • 1 tsp Salt Adjust to taste.

Method
 

Preparation
  1. Start by thawing the frozen corn if it’s not already. Place it in a bowl.
  2. Finely chop the red onion and add it to the corn.
  3. Seed and dice the jalapeño pepper, then incorporate it into the mix.
  4. Toss in the chopped cilantro for that fresh, herbaceous taste.
  5. Add the lemon and lime juice, along with the salt, and mix everything until well combined.
  6. Taste and adjust seasoning if necessary, then serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to 3-4 days. Can freeze for a couple of months, though texture may change.
