- Start by thawing the frozen corn if it’s not already. Place it in a bowl.
- Finely chop the red onion and add it to the corn.
- Seed and dice the jalapeño pepper, then incorporate it into the mix.

- Add the lemon and lime juice, along with the salt, and mix everything until well combined.
- Taste and adjust seasoning if necessary, then serve chilled or at room temperature.
Notes
Store leftovers in an airtight container in the fridge for up to 3-4 days. Can freeze for a couple of months, though texture may change.
