Preparation
- Begin by adding all chipotle mayo ingredients to a small blender. Season to taste (start with about 1/4 teaspoon salt and 1/8 teaspoon pepper). Blend until smooth and refrigerate for later.
- Preheat your oven to broil.
- Slice the focaccia into sandwich size; cut it in half and spread butter on the cut sides. If you're using garlic powder, sprinkle it on now.
- Place the sliced bread on a baking sheet and broil for 45-90 seconds until golden brown. Don’t forget to flip and toast the other side.
Assembly
- Spread chipotle mayo on the bottom half of the bread, then layer it with chicken and cheese. Broil again for another 30-90 seconds until the cheese melts beautifully.
- Top the sandwich with peppers, avocado, and cilantro.
- Spread a bit more chipotle mayo on the top half of the bread, press the two halves together, and optionally press with a heavy pan. Return to the oven for another 30-60 seconds to warm through.
- Serve immediately as this sandwich is best enjoyed fresh!
Notes
Store leftovers wrapped tightly in plastic wrap or in an airtight container in the fridge for up to 2 days. Reheat in the oven or an air fryer to maintain crispy texture.
