Chipotle Chicken Avocado Melt

Ingredients
  

For the Chipotle Mayo
  • 1 tablespoon chipotle in adobo sauce (1 chipotle and surrounding sauce)
  • 1/4 cup mayonnaise (Best Foods)
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon honey
  • Salt and pepper to taste
For the Sandwich
  • 1 loaf focaccia, cut to sandwich size or 1 ciabatta roll
  • 1 tablespoon unsalted butter, softened For spreading on bread
  • 2 ounces rotisserie chicken, shredded
  • a few leaves cilantro
  • 1 tablespoon sweet cherry peppers, seeds removed and thinly sliced
  • 1 slice white Cheddar cheese, cut in half
  • 1/4 large ripe avocado

Method
 

Preparation
  1. Begin by adding all chipotle mayo ingredients to a small blender. Season to taste (start with about 1/4 teaspoon salt and 1/8 teaspoon pepper). Blend until smooth and refrigerate for later.
  2. Preheat your oven to broil.
  3. Slice the focaccia into sandwich size; cut it in half and spread butter on the cut sides. If you're using garlic powder, sprinkle it on now.
  4. Place the sliced bread on a baking sheet and broil for 45-90 seconds until golden brown. Don’t forget to flip and toast the other side.
Assembly
  1. Spread chipotle mayo on the bottom half of the bread, then layer it with chicken and cheese. Broil again for another 30-90 seconds until the cheese melts beautifully.
  2. Top the sandwich with peppers, avocado, and cilantro.
  3. Spread a bit more chipotle mayo on the top half of the bread, press the two halves together, and optionally press with a heavy pan. Return to the oven for another 30-60 seconds to warm through.
  4. Serve immediately as this sandwich is best enjoyed fresh!

Notes

Store leftovers wrapped tightly in plastic wrap or in an airtight container in the fridge for up to 2 days. Reheat in the oven or an air fryer to maintain crispy texture.
