Ingredients
  

For the Marinade
  • 2 pieces Chipotle peppers in adobo sauce Adjust based on desired spice level.
  • 1/4 cup Olive oil
  • 1/4 cup Lime juice
  • 3 cloves Garlic Minced
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
For the Chicken
  • 1.5 pounds Chicken thighs Can substitute with chicken breasts.

Method
 

Marination
  1. In a blender, combine chipotle peppers, olive oil, lime juice, garlic, cumin, paprika, salt, and pepper. Blend until smooth.
  2. Pour this marinade over the chicken and refrigerate for at least an hour, or overnight for maximum flavor.
Cooking
  1. Preheat your grill or a skillet over medium-high heat.
  2. Remove the chicken from the marinade and cook for about 6-8 minutes per side, or until cooked through and juices run clear.
Serving
  1. Remove the chicken from the heat and let it rest for 5 minutes before slicing.
  2. Serve with tortillas for tacos, over rice, or atop a salad with avocado and beans.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Can be frozen for 3 months. Thaw overnight and reheat in a skillet over low heat.
