- In a bowl, mix together the olive oil, chili powder, cumin, smoked paprika, garlic, onion powder, salt, pepper, and lime juice to create the marinade.
- Place the chicken into the marinade, ensuring it’s fully coated. Cover and refrigerate for at least 30 minutes, but ideally for up to overnight to deepen the flavors.
Cooking
- Preheat your grill or skillet to a medium-high heat.
- Cook the marinated chicken for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Remove from heat and let it rest for a few minutes before slicing.
Notes
Store leftovers in an airtight container in the refrigerator for 3-4 days. For best results, freeze cooked chicken in freezer-safe bags after cooling.
