Ingredients
  

For the Marinade
  • 1/4 cup olive oil Extra virgin is recommended for the best flavor.
  • 2 tablespoons chili powder Adjust to taste for spiciness.
  • 1 tablespoon ground cumin adds warmth to the marinade.
  • 1 tablespoon smoked paprika for a smoky flavor.
  • 2 cloves garlic, minced freshly minced for the best taste.
  • 1 teaspoon onion powder adds depth to the marinade.
  • 1 teaspoon salt to enhance all the flavors.
  • 1/2 teaspoon black pepper freshly ground is recommended.
  • 1 tablespoon lime juice freshly squeezed for brightness.
For the Chicken
  • 2 pounds chicken thighs or breasts Thighs are juicier, but both will work.

Method
 

Preparation
  1. In a bowl, mix together the olive oil, chili powder, cumin, smoked paprika, garlic, onion powder, salt, pepper, and lime juice to create the marinade.
  2. Place the chicken into the marinade, ensuring it’s fully coated. Cover and refrigerate for at least 30 minutes, but ideally for up to overnight to deepen the flavors.
Cooking
  1. Preheat your grill or skillet to a medium-high heat.
  2. Cook the marinated chicken for approximately 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  3. Remove from heat and let it rest for a few minutes before slicing.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. For best results, freeze cooked chicken in freezer-safe bags after cooling.
