Ingredients
  

For the marinade
  • 3 tablespoons chipotle peppers in adobo sauce Adjust for desired heat level
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste Use to season to preference
For the chicken
  • 4 pieces chicken breasts Can substitute with chicken thighs

Method
 

Preparation
  1. In a blender, combine the chipotle peppers, olive oil, honey, cumin, garlic powder, onion powder, oregano, salt, and pepper. Blend until smooth.
  2. Place the chicken breasts in a large zip-top bag and pour the marinade over them. Seal the bag and shake to coat the chicken evenly.
  3. Refrigerate the chicken for at least one hour or ideally overnight for best flavor.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Remove the chicken from the marinade, discarding any excess marinade.
  3. Grill the chicken for 6-8 minutes on each side or until fully cooked and reaches an internal temperature of 165°F.
  4. Let the chicken rest for a few minutes before slicing and serving.

Notes

Consider marinating overnight for more flavor. For a smoky taste, add smoked paprika to the marinade. Always allow chicken to rest after grilling for juiciness.
