Ingredients
  

For the marinade
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the chicken
  • 1 lb chicken breasts or thighs You can also substitute with turkey or tofu.

Method
 

Marination
  1. Mix the olive oil, lime juice, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper in a bowl.
  2. Add the chicken into the marinade and coat well. Let it sit for at least 30 minutes—ideally in the refrigerator.
Cooking
  1. Preheat your grill or skillet over medium-high heat.
  2. Cook the chicken for about 6-7 minutes on each side, or until it reaches an internal temperature of 165°F.
  3. Once cooked, let it rest for a few minutes to retain its juices. Then slice and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. When reheating, aim for a low temperature to keep the chicken tender. For a citrusy twist, try adding a splash of orange juice to the marinade.
