Ingredients
  

For the Marinade
  • 2 pounds chicken thighs Juicy thighs are recommended, but chicken breasts can be used.
  • 2 tablespoons olive oil
  • 1 tablespoon chipotle peppers in adobo sauce, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 juice of lime Squeeze over cooked chicken.

Method
 

Preparation
  1. In a bowl, combine olive oil, minced chipotle peppers, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  2. Coat the chicken thighs in the marinade thoroughly and let them sit for at least 30 minutes, preferably up to several hours.
Cooking
  1. Preheat your grill or skillet over medium-high heat.
  2. Cook the marinated chicken for 5-7 minutes on each side until fully cooked and charred.
  3. Once done, remove the chicken from heat and squeeze fresh lime juice over it.
  4. Let the chicken rest for a few minutes before slicing and serving.

Notes

For best flavor, allow the chicken to marinate overnight. Monitor internal temperature to reach 165°F for safe consumption. Can add pineapple or mango for sweetness, and substitute shrimp or tofu for dietary variations.
