  • 15 ounces black beans Lightly drained.
Toppings
  • 4 cups shredded romaine lettuce
  • 1 cup shredded Monterey Jack cheese
  • 1 recipe Chipotle Guacamole Prepare according to your favorite recipe.
  • ½ cup sour cream For garnish.
  • 1 piece lime Cut into wedges for serving.
  • 2 to 3 medium tomatoes Cut into ¼-inch pieces.
  • ¼ cup finely chopped red onion
  • ¼ cup finely chopped fresh cilantro
  • 3 pieces finely chopped jalapeño peppers
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice

Preparation
  1. Prepare the Chipotle Chicken according to recipe instructions and cook the cilantro lime rice.
Make Fresh Tomato Salsa
  1. In a medium bowl, combine the cut tomatoes, red onion, fresh cilantro, chopped jalapeños, lemon juice, lime juice, and salt. Mix well and let it sit to meld flavors.
Assemble the Bowls
  1. Start with a scoop of cilantro lime rice as the base.
  2. Add the Chipotle Chicken and black beans.
  3. Layer with romaine lettuce, Monterey Jack cheese, and fresh tomato salsa.
  4. Top with chipotle guacamole and sour cream. Serve with lime wedges on the side.
