  3. Chop the fresh cilantro, jalapeños, red onion, and tomatoes into small, bite-sized pieces.
Assembly
  1. In a large serving bowl, create a bed of romaine lettuce as the base.
  2. Layer the cilantro lime rice on top of the lettuce for a hearty texture.
  3. Add the cooked chipotle chicken and black beans over the rice and lettuce.
  4. Top with fresh chopped tomatoes, jalapeños, and red onion for a vibrant contrast.
