Ingredients
  

For the Teriyaki Sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons honey can substitute with maple syrup or agave nectar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1 cup water
For the Chicken
  • 1 pound chicken breast, cut into bite-sized pieces can substitute with tofu or different protein
  • 1 tablespoon vegetable oil for sautéing
  • 2 cups steamed broccoli (optional) for added nutrition and color
  • cooked rice for serving

Method
 

Preparation
  1. In a small saucepan, whisk together soy sauce, brown sugar, honey, rice vinegar, cornstarch, and water. Bring the mixture to a boil over medium heat, stirring frequently until it thickens into a syrupy sauce.
  2. While the sauce is thickening, heat vegetable oil in a large skillet over medium heat. Once hot, add the chicken pieces, cooking until they are golden brown and cooked through, about 5-7 minutes.
  3. Pour the prepared teriyaki sauce over the chicken, stirring until all pieces are evenly coated. If desired, add steamed broccoli at this point and heat through.
  4. Serve the teriyaki chicken over cooked rice to soak up all the delicious sauce.

Notes

For best results, try marinating the chicken in soy sauce for 30 minutes before cooking. Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to three months.
