Ingredients
  

For the Chicken Marinade
  • 2 lbs chicken thighs, boneless and skinless Thighs are recommended for juiciness and flavor.
  • 3 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
For Serving
  • Pita bread or flatbread For serving.
  • Fresh vegetables (lettuce, tomatoes, cucumbers) For serving.
  • 1 cup garlic sauce (store-bought or homemade)

Method
 

Preparation
  1. In a large bowl, combine olive oil, cumin, coriander, paprika, turmeric, garlic powder, onion powder, salt, and pepper.
  2. Add chicken thighs to the marinade, ensuring they are well coated. Marinate for at least 30 minutes or overnight for best results.
Cooking
  1. Preheat the grill or skillet over medium-high heat.
  2. Cook the marinated chicken for 5-7 minutes on each side, or until cooked through and nicely charred.
  3. Remove the chicken from heat and let it rest for a few minutes, then slice into strips.
Serving
  1. Serve the chicken in pita bread or flatbreads, topped with fresh vegetables and drizzled with garlic sauce.

Notes

For the best flavor, marinate your chicken overnight. Consider adding sides like tabbouleh salad or hummus to complement the meal. Leftovers can be stored in an airtight container in the refrigerator for 3-4 days or frozen for up to 2 months.
