  • 16 oz Chicken breast strips, fully cooked Use fully cooked chicken strips to cut down on preparation time.
  • 1/2 cup Jalapeno sauce, homemade
  • 6 cups Mexican cheese, shredded Don't skimp on the cheese for a luscious taste.
  • 6 large Flour tortillas Can use whole wheat tortillas for a healthier option.

Method
 

Preparation
  1. Preheat a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle it with 1 cup of Mexican cheese.
  3. Add a portion of the cooked chicken strips to one side, then drizzle with jalapeño sauce.
  4. Top with another cup of cheese and place another tortilla on top.
  5. Cook until the bottom tortilla is nicely golden brown, then carefully flip the quesadilla to cook the other side until golden brown and the cheese is melted.
  6. Repeat with the remaining ingredients until you have several perfect quesadillas.
  7. Cut each quesadilla into wedges and serve hot.

Notes

Serve with salsa, guacamole, or sour cream for dipping. Consider adding a fresh salad or seasoned rice on the side. For leftovers, store in an airtight container in the refrigerator for up to three days.
