Preparation
- Preheat a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle it with 1 cup of Mexican cheese.
- Add a portion of the cooked chicken strips to one side, then drizzle with jalapeño sauce.
- Top with another cup of cheese and place another tortilla on top.
- Cook until the bottom tortilla is nicely golden brown, then carefully flip the quesadilla to cook the other side until golden brown and the cheese is melted.
- Repeat with the remaining ingredients until you have several perfect quesadillas.
- Cut each quesadilla into wedges and serve hot.
Notes
Serve with salsa, guacamole, or sour cream for dipping. Consider adding a fresh salad or seasoned rice on the side. For leftovers, store in an airtight container in the refrigerator for up to three days.
