  • 4 pieces Chicken breasts Boneless and skinless
  • 1/2 cup Flour For dredging
  • 1/4 cup Olive oil For cooking
  • 2 tablespoons Butter For enriching the sauce
  • 1 cup Chicken broth
  • 1/4 cup Fresh lemon juice From real lemons works best
  • 2 tablespoons Capers
  • 1/4 cup Fresh parsley Chopped, for garnish

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper before dredging them in flour.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the chicken and cook each side for about 3-5 minutes until golden brown.
  3. Remove the chicken from the skillet and set aside.
  4. Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
  5. Stir in the capers and return the chicken to the skillet, allowing it to simmer for about 5 minutes.
  6. Swirl in some butter to enrich the sauce and serve with a garnish of freshly chopped parsley.

Notes

Leftovers can be refrigerated in an airtight container for up to three days. For reheating, gently warm on the stove or microwave until heated through. To make gluten-free, use gluten-free flour or cornstarch for dredging.
